I bought one of these five years ago and used it every day. It's still in great condition, but I bought more because I was always missing mine when it was dirty or in the dishwasher. A high-quality product.

I really love these boards for cutting, serving, etc. The largest one is a great size for serious cooks. One downside though: the largest board tends to warp after you hand wash and air dry it. Always concave towards the side that's wet, like wood. When it warps enough, I can spin it in circles on my smooth countertops. I end up turning it over for cutting stability. I've never experienced this with my older Epicurean cutting boards, which had a waxier surface. I'm wondering if I should have sealed the newer boards with mineral oil or wax. If I wash the board evenly on both sides, it tends to flatten out over time. But it's a never ending process to keep both sides evenly washing. Not something I really want to think about.

Minor warping may occur from time to time. Because Epicurean products are made from natural materials, some movement of the board in and of itself is normal. We do recommend storing your board on edge when drying and not in use. In most cases, warping may either self-correct or most likely will be able to be remedied by “counter warping”.
